Three words for this Broiled Zucchini with Feta Crumbs ~ Quick.  Easy.  Yummy.  If you've got tons of zucchini coming from your garden, you'll want to check out this fabulous way to enjoy it.



Every couple of months I do one of my absolute favorite things ~ I take out a big stack of cookbooks, my 'torn-out-of-magazines' recipe folders, and my 'to create' idea notebook and spend several hours combing through them ... compiling a list of the dishes and recipes I'd like to work on testing and making over the next couple of months.  I could spend hours and hours culling through recipes, and be quite happy.  I usually end up with a list longer than I could possibly cook in an entire year!

When I sat down at the start of the summer to compile my list ...
I came across the recipe I used as the starting point for this Broiled Zucchini with Feta Crumbs in my American Heart Association Low-Calorie Cookbook.

It went on the list.

A couple weeks later I was lucky enough to score a big bag of freshly-picked zucchini from a friend's garden.  So I went to work trying out the recipe and several variations to it.  I, of course, made tweaks to the original recipe ... 'cause, you know, that's just what I do.

And oh, this dish is a keeper!



I love how quick and simple this is to prepare.

Simply halve some medium-sized zucchini the long way and spread each cut side with some Dijon mustard ... or some mayonnaise, if you prefer.  Both taste yummy, so pick your preference.  I love the little zippy zing of flavor the Dijon mustard provides!



Place the zucchini halves on a foil-lined baking sheet and broil them for a few minutes.

While the zucchini broils, whip up a quick crumb topping with feta cheese crumbles, seasoned bread crumbs, green onions, and olive oil.



Pile a few tablespoons of the feta crumbs on each zucchini half.



and stick the pan back in the oven with the broiler turned off.  While you finish preparing the rest of dinner, the zucchini will finish cooking in the warm oven.




Broiled Zucchini with Feta Crumbs

Ingredients
  • 2 medium-sized zucchini
  • 1 1/2 T. Dijon mustard OR mayonnaise
  • 1/4 c. feta cheese crumbles
  • 1/4 c. seasoned Italian-style bread crumbs
  • 2 T. finely chopped green onion
  • 2 T. extra virgin olive oil
  • salt & pepper
Directions

  1. Cut zucchini in half lengthwise. Spread the cut side of each half with Dijon mustard or mayonnaise {we like the little zing of flavor that Dijon mustard gives, but either spread works great}; place zucchini halves, cut side up, on a foil-lined baking sheet.
  2. Broil about 5 inches from the heat for 7 minutes.
  3. While zucchini broils, combine feta, bread crumbs, green onion, and olive oil in a small bowl; stir together with a fork.
  4. Remove zucchini from the broiler, but leave the broiler on. Place about 3 tablespoons of feta mixture on each zucchini half.
  5. Turn the broiler off and return zucchini to the oven. Let zucchini stand in the still-hot oven for 5 to 7 minutes. {If you're still finishing up the rest of dinner, it can hang out in the oven a bit longer to keep warm.}  When ready to serve, sprinkle each zucchini half with salt and pepper, to taste.
